Sponge candy has light airy center (like spun sugar) and a crisp texture, although it resembles a sponge, hence the name. Sponge candy is available covered in milk chocolate or dark chocolate in an 8 ounce package. Sometimes it's called honeycomb (although there's no honey in it) or sea foam.
